What the minutes mean
From boiling water: soft about 5 minutes, medium about 7, hard about 12 — times move with egg size, starting temperature and how you like the yolk. For a fully safe hard-cooked egg, the USDA method is to cover the eggs with water, bring to the boil, take the pan off the heat, cover it, and let the eggs stand 12 minutes (medium eggs) to 18 minutes (extra large).
