KFC states those figures PER 100 g and states each product's average portion weight beside them; both numbers are KFC's, and the per-portion figures stored here are that arithmetic and nothing else — no value is estimated, inferred from a similar product, or translated. The table carries no sugars, saturated fat or fibre column, so those stay empty. KFC's own note on the table says the values may deviate by up to 10% because of the preparation process and natural variation in the chicken. A row whose figures its own arithmetic does not support is left out rather than corrected.
